Pumpkin Pie

 

Pumpkin Pie Bars

Bean Dip:

 

  • 1 can dark red Kidney beans
  • 1/2 diced onion
  • monterey jack cheese, to taste (optional)
  • extra- virgin olive oil
  • jalapeno hot sauce (to taste)
  • ground rainbow peppercorn

In a saute pan, saute the onion with a little bit of oil until soft and browning. Meanwhile, puree the beans with a tad bit of water until mixture is smooth. Sprinkle in a small bit of sea salt and ground pepper. In the pan with the onions, add the bean mixture. Add a drop of jalapeno hot sauce, or however much you would like in it. Cook this over medium heat for about 3-5 minutes. Add a handful or so of the cheese and a bit more olive oil so it doesn’t stick. Stir and cook until the cheese is fully melted. Take off the heat and add a bit more cheese. 

Best Home-Made Dressing:

  • low-sodium soy sauce
  • 1/2 packet of stevia in the raw
  • whole grain dijon mustard

Use smaller amounts of mustard than soy. Stir all the ingredients together well. Use as dressing or marinade.
